Shady Knoll Pommeau (750mL)

Shady Knoll allows their apple juice to ferment naturally (without the addition of any yeast or other additives) for six to nine months (a classic technique in the Normandy region of France to produce Calvados).  Their Apple Brandy is double distilled in the distillery's French alembic Charentais pot still in order to enhance its flavor and proof. 

They  then age it for at least three and one-half years in new toasted American oak barrels and then finish it for four additional months in premium used Portuguese Madeira barrels.  Then they combine the aged Apple Brandy with fresh apple juice from their on-site orchard, which is then rested for several months in used Shady Knoll Apple Brandy barrels to create this unique Pommeau. 

The nose and taste of Shady Knoll Pommeau reflects the terroir and complexity of their homegrown apples, the multiple flavors from the distillery's toasted oak barrels, the rich smoothness of their Maderia barrels and the appley enhancement of fresh apple juice.
