A whiskey gets its color and character from the cask in which it ages and matures.  This Limited Edition Double Cask Wyoming whiskey is aged in one of the most unique maturation environment in the whiskey world. Kirby Wyoming has a sub-zero cold winter and desert blistering hot summer weather to make the bourbon dance in and out of the oak cradle. That environment is tough on people, but it’s extremes have great potential for aging whiskey.

The Double Cask Limited Edition starts with the same wheated bourbon used in the Small Batch and Single Barrels. The mashbill is 68% Corn, 20% Wheat, 12% Malted Barley. 

Wyoming Double Cask Bourbon goes through the aging process twice. The first five years of maturation in a new charred oak barrel makes it a bourbon. That bourbon then experiences secondary maturation in decades-old casks seasoned by Pedro Ximenez sherry that adds a touch of sweetness, and yields a smooth and impressively complex spirit,  It's not chill filtered and bottled at 50% ABV.

Wyoming Double Cask Bourbon Tasting Notes:

Color: copper to mahogany
Aroma: autumnal notes of dried apricot, mission fig, and dried date
Mouthfeel: rich, sticky cinnamon roll with raisins and spice
Palate: stewed prune and black raisin, with hints of candied orange peel; vanilla butter cream and toffee underneath
Finish: dark dried fruit, followed by warming brown baking spices
