Born 40 years after the signing of the Declaration of Independence, George A. Dickel was an established Nashville merchant when he entered the whisky business. Dickel grew his reputation for selling the smoothest, most mellow spirits in the region.
Thus, Geo. A. Dickel & Co. was born and when the Cascade Hollow Distillery opened in 1878 in neighboring Coffee County, George Dickel bought a large share. George Dickel followed in the Scottish tradition of spelling whisky without an “e.”
George Dickel preferred whisky made in the winter months more than summer months because he felt it made the whisky taste smoother, so the company began advertising their Geo. A. Dickel’s Cascade Tennessee Whisky as “Mellow as Moonlight.” The whisky is chilled before undergoing the charcoal-mellow filtration known as the Lincoln County Process. This extra step smooths out the flavor and Dickel is still the only Tennessee distillery to do it.
As George Dickel whisky ages and mellows, each barrel imparts its own unique taste and aroma ensuring that no two are the same. Some barrels develop a particularly special character that deserves even more time in barrel to fully develop. George Dickel 15 YO Single Barrel Select Tasting Notes:
Aroma: A delicious aroma of vanilla, caramel, oak, cinnamon, fresh fruit/apple, cherry notes. There is a custard note that showed up on the fourth pass. That custard aroma seems to only show up as the whiskey is swirled in the glass. Hints of candied fruit and vanilla cinnamon roll. This whisky brings a lot to the table on the nose. There is a definite richness that comes from 15 years of age.
Body/ Mouthfeel: medium body with thick mouthfeel and long legs around the glass.
Palate: flavors of caramel, cinnamon, oak and cherry.
Finish: Long finish of cinnamon, oak, with a hint of cherry.
